Perhaps it doesn't apply to you, but there are many published studies noting various types of deficiencies common in vegetarians. For example:
1) Eating protein, but not getting enough sulfur amino acids due to the protein sources chosen. Or, simply not getting enough protein at all.
2) Not getting enough of particular types of fat. This isn't something that's generally tested for.
3) Deficiency in certain vitamins, minerals, and trace minerals. For example, B-vitamins, iron, copper.
With regard to your comment about yellowish palms and carotenemia, beta-carotene is not the only compound that can cause this. For example, lycopene from tomatoes can cause lycopenemia and cause an orange-like tint.
