I know you're looking for substances to help figure out what's going wrong. I didn't find a specific substance caused me issues on either of those two, although I didn't actively chelate out copper.
When I used to have Brain Fog it was almost always related to not enough glucose in the brain - basically some form of crash. Often that was me having chocolate or having been overly active beforehand. Overactive could include the gym, an anxiety attack or even just elevated cortisol. At least that's what it seemed like.
As for derealisation, yeah I know what you mean. That's a sucky symptom - sorry you're dealing with that. For me there was no specific substance involved - it was a stage. It seemed to appear as the primary symptom when I was healing and had cleared up more demanding problems.
At that point, derealisation seemed to be a stress circuit breaker. When my mind/body was just too stressed it'd almost bypass that and have me derealise. At the time I realised the derealisation (heh) was a numbness replacing a bad experience, so that was progress.
It was strong on and off for a month or so, then faded away totally for months now.
