I did some remedial study on your investigative work concerning fermentation time frames and discovered that you might not have gotten it right. I did not get down far enough on your referenced page to see the correct charts yesterday.

The comment below is the key to the charts as far as what I can see.

"Determination of the Lactobacillus count theoretically equals the total lactic acid bacteria count minus the Leuconostoc count." This sentence is right above the charts to the left.

The leuconostoc dies off as the planterum and brevis take over. So the last column in both chart a and b show me that the probiotics growth takes a big leap at day 14 and continues to grow a bit more into day 35. So if you want to increase the probiotics then let er grow.

I am still going to try your quick grow method with a couple air lock jars with added reuteri but you might find the link below interesting. They claim the quick fermentation method may skip a couple vital steps.
