The problem with beta carotene is not the beta carotene itself, but the fact
that it changes once it enters the body. Beta carotene is a polyunsaturated
fatty acid, which is a long strand of acids bonded together. Estrogen is
formed when these fatty acids close together to form a ring. This can happen
easily when beta carotene is ingested, so it is important for women with
estrogen dominance problems to watch their intake of beta carotene.

One of the studies that you sent me was of cleavage of beta carotene. They
chemically separated the beta carotene into parts and this may have changed
its tendency to convert to estrogen in the body. The other study used
unbroken beta carotene, but they did not exactly explain how the study was
done. Thirty years ago, when hormone replacement therapy was first
introduced, they claimed that clinical studies showed it reduced heart
attacks. Recently, after many years of research and longer-term studies,
they now say that it can cause heart attacks. You just never know how these
studies are done. A new study may come out in a few years showing how beta
carotene caused tumors to grow.

It is well known that beta carotene can easily convert into estrogen in the
body. One of our customers went to a well-known fertility clinic in downtown
Toronto. The medical doctor there told her to avoid eating a lot of carrots.
She told the doctor that she didn't eat a lot of carrots, but wondered why he
wanted to know. He told her that eating too much beta carotene (found
abundantly in carrots) can increase estrogen levels and create fertility
problems.
