Actually fructose is easy to absorb and doesn't require any further breakdown by enzymes, but it is absorbed directly, and the absorption rate is limited. So the maximum a person can absorb in one sitting is around 28-50 grams. So basically, anything more than a single piece of fruit will end up becoming available to microbes. This is assuming you don't have fructose malabsorption. If you suspect it, you can improve absorption by taking it 1:1 with glucose.
Actually, your body's sucrase breaks down Sucrose into one part glucose and one part fructose, and in this ratio, you can absorb much more fructose.
