I think and hope that once you get stabilized that it will be much easier for you to do things like keep a journal.
As far as dairy goes, I believe that it can be mucous forming if your body doesn't have enough lactase. Milk and cheese have always agreed with me, while grains have been an issue for a long time. There are lots of veggies now that I don't tollerate and unfortunately I haven't been able to eat any raw veggies for a few months now.
I have hard core milk cravings and I believe in trusting my body. There was a time when I first started feeling excessively dehydrated from adrenal fatigue that I would walk into the grocery store and drink a whole gallon of milk right there in the isle. It felt like that was the only thing that curbed my thirst. So, I try to trust my body over what other people think or believe to be healthy. I would really really like to get a hold of some raw milk though. The health food store here gets it from a farm that is an hour away and they won't come while the goats are mating. Once I can get some though I'm gonna make some raw butter which tastes so gloriously wonderful and helped me to feel better the few times that Ive had it.
