  Instead of the capsules, can the herbs  be drank mixed in water w/no heating? Any particular reason they need to be encapsulated. I am not trying to be annoying but I know she does not like pill/capsules and she'll rather have the plain herbs.

Mainly due to the taste.  Andrographis is very bitter, and chaparral is not very pleasant either.  So most people will not take it in powder form due to the taste.  If she will take the powders straight that is great though.  The dosage would be 1/2 teaspoon 3 times daily at least 20 minutes before meals.  The bitterness will cause a strong cleansing reaction on the liver so it is also important that she drink a lot of water throughout the day.  She may also feel a little flu like for a few days from the detox, but this usually does not last more than two to three days.

Also, i buy my herbs from mount rose herbs, but I am wondering if you recommend any other place. They do not have all the herbs I need for the capsules. 

Starwest Botanicals is also a good source of herbs and they have all these, except amla, in powder form.
