Thanks for that rebuttal. It is all very interesting. I did not read a book by Enig...just Fallon. I've just been confused because in the book I read she promotes fermented soy and acknowledges the cancer-meat connection. So, in that light, it is hard to see her as anti-soy and wrecklessly pro-meat. I think I see the heart of this is her anti-vegetarian diet stance. That does come across loud and clear in the book.
But, thank you for the information on phytates. I see that if roasting and sprouting also reduce the levels, and that the typical diet wouldn't give anyone too much anyway. But, I still look forward to Hv's answer as to whether processing for tofu or soy milk take care of any of the phytates and goitrogens...or if I have to find a special source of it to be sure.
