There is something very wrong with seeing that 40% of our food goes to waste while so many go to bed hungry.  Think of all the energy. time, efforts and money that could be saved if we could just cut out most of our food waste.

Anyone who grows their own and does not can or freeze is really missing out.

One easy thing to do is convert left-overs and unused vegetables into healthy soups and stews.  Or take vegetables that are about to go beyond freshness and juice them.  I like to put them in my Oster and use the pulp and all.

Likewise, fruits can be frozen and then later made into healthy and delicious frozen fruit smoothies.

Personally, I cringe when I have to throw out anything that could have been used with just a bit of planning and effort.  Most food items that do get thrown away are returned to the soil.
