I love the yellow variety of beets, and their leaves are really nice in salad. I grew an heirloom variety last year that was pink and white striped, very pretty, and nice eating, sweet and mild.

You need to be careful about eating a lot of raw chard or beet leaves, as they contain a lot of oxalic acid, which in large amounts can be a problem.
