sunflower seed and pumpkin seed are the best as far as intolerance and mineral intake. If you do not suffer from thyroid problems, sunflower roasted with tamari will be a great snack.

Sesame seeds are too high in carbohydrates and should be avoided (try bunckwheat, millet or quinoa instead). And flax looses its property easily. Cooked ground flax actually turns poisonnous, so do not ground and cook or else use you ground flax with soy milk for cereal .
