candida friendly travel food?


hi all -

i started the candida diet a month or so ago. it's easy enough to follow with a kitchen at hand, but here's the kicker: i'm leaving for a 4 or 5 month-long road trip at the beginning of april. i had saved up a huge box of food to bring (dried fruit/veggies, energy bars, beans, brown bread, etc), but alas, i can't eat 90% of it now that i'm on this diet.

i'll probably be buying fresh produce/meat when i can to cook out over campfires, but i'm on a budget, and i need some snack food. i'm not always gonna be able to build a fire and stuff. i'm stockpiling nuts (brazil, macadamia, almonds, hazelnuts) and tuna. but i know that nuts are iffy, and tuna's fulla mercury. are there any other canned foods/easy-to-store/easy-to-prepare foods i can bring?! canned veggies, canned meats, etc?

i am planning on making some "crackers" from ground flax, pumpkin, and sesame seeds, and possibly my own jerky. is jerky acceptable if it's home made?

any ideas would be greatly appreciated!
