I eat exclusively meat and fat.  80% of calories in my food comes from fat and 20% comes from protein. I eat NO veggies/sugars/starches. The meat that i eat is mostly raw, so there is no chance of scurvy. It is mostly raw because even through it is prepared it has not lost any nutritional value. It dried to 25% of it's mass and then mixed with fat to form one of the most calorie dense food stuffs you can encounter. It is called Pemmican. I eat about 12-16 oz a day. Once a day.

On a no carbohydrate diet there is no need to restrict calories, as the link below shows. Calories is not a very strict indicator as far as fat gain is concerned. The biggest benefit of eating this way is that I eat once a day, and there is no hunger, just like when you are in the middle of the water fast
