There is someone I know who is pretty deeply plugged into the government medical machinery. On a couple recent visits, they have mentioned that the government is "looking into" Cayenne as the supposed cause of GI cancers particularly in people (like Central and South Americans) for whom this kind of spice is a traditional ingredient they cook with. Of course I am skeptical of this. For starters, I would think that on a routine basis the USG medical machinery is already preoccupied doing what it does to not really have the time nor interest to look into what is supposedly causing GI cancers in foreigners living to our south. Secondly, I am more skeptical any time I hear about the USG being moved to be looking into something/anything, cause they are the kind of folks likely to find something especially when there is nothing there to be found. Anyway, just to give some benefit of the doubt here, if they are worried about traditional cooking methods being a cause of GI cancers, I take this to mean they are looking into effects from cooked cayenne, not raw. Far as I know, the two are as different as night and day....apples and oranges, same as it is with pretty much any other natural food that can be taken raw or cooked. Once it is been cooked, it no longer is what it naturally was.
