Out of curiosity, what cravings do you generally have? Sugar? Carbohydrates in general?
I am with you on the fruits and veggies. If you add up what you need to eat to make your fiber goal it's quite a bit, though if you stick to the more fiberful foods it is doable. And being a heavy duty colon cleanser, Fuhrman is down my alley.
Do you plan to follow this diet for a set period, as a cleanse, or are you aiming to make this your way? Will you give yourself days off for good behavior, or just get back on the wagon if you fall off?
