Hi am3! You just put your pound of butter in a saucepan on low until it is all melted. (doesn't take long) Dont' brown or anything. Then let it sit a bit and it ends up seperating. Skim off the white stuff on top, then pour the clarified butter into a jar or container...but make sure you don't pour the white stuff that has collected at the bottom! What seperates out is the unsaturated fats from the pure good stuff! Here...I just searched and found something on it. It's called Ghee.
