The glycemic index is still less than carrots, but in addition apples skins have extremely complex bioflavenoids and polyphenols. Apple seeds contain vit. b-17 amoung other enzymes. So, this is why we are recommending people steer away from carrots and not worry too much about apples. As long a 50% of your juice is green.
I have juiced, love to juice, and some days I go extra green, I go crazy. Spinach, parsley, sprouts, broccolli, kale, lime sprigg and then sweeten with pears and grapes. Sometimes I sprinkle cinnamon or use clove oil. Makes me pee more than tea does!
The seeds and skins of grapes are loaded with polyphenols as well.
I also do something that most people do not do, I take the pulp and rejuice it and then flush the redone pulp with water and press it.
Sounds anal but why waiste anything in the seeds and skins.
If I juice red I use tomatoes instead of carrots, red grapes, red and redish apples.
Mixing green with red makes brown,....ugly color just to look at.
