What is it about boiling flax...does the omega-3 turn to trans-fatty acids?

I don't follow the Adventist's diet, particularly, but I've eaten in their restaurants, and enjoyed that very much.

I also attended their cooking classes and dinners, put on by a local group who run a bakery (sprouted grains) and a retreat, plus I bought the cookbook offered. That's when I saw how those folks use flax seed gel...and nut milk.

Isn't that great about B12?!

I, too, eat very little meat. Since I was raised without it, I just tell hubby that it is wasted on me, I don't much appreciate the flavor. Far be it for him to waste grocery money!

Another aside...

I read of a 24 year-old who traveled alone in Alaska in his converted bus. Way out in the boonies he dug some Indian potatoes for his supper. (No relation to our potatoes.)

He thought the greens would make a nice side dish, and he cooked and ate those, too.

Shortly after that he became paralyzed...and realized his mistake. He spent the next week or two writing letters to his family on any scrap of paper he could reach.

Those letters were beautiful, and were his legacy to his loved ones. I believe he was even able to take a couple of photos of himself as he wrote them.

Probably our forefathers had to learn the hard way, what is good to eat, and not. Then, tell each other.
