Your symptoms do sound like die-off, which is a good sign. They should lessen soon.
I couldn't adhere to the strict diet myself, but found it was easier for me to gradually "withdraw" from some of the bad foods. However, i don't have a gluten allergy, so i can only say it's probably best to avoid THAT at all costs if possible.
I do have carrot juice to satisfy my cravings for sugar, figuring it's the lesser of 2 evils and rationalized that carrots are packed with vitamins and minerals! And am gradually losing my cravings for either. But I did water down the carrot juice with at least twice the water. Now super-sweet sugary treats are disgustingly cloying if I try one.
I know this is controversial, but my dr (he's a md AND nd) says agave is ok for sweetening. And again, it's helped wean me off sugar. Doesn't give a
Sugar "high".
You might try raw almonds as a snack...I munch on them alot to satisfy the need for something snacky. Also avacado satisfies that creamy craving. Don't know if these are a no-no, but again, they have satisfied needs for MUCH worse foods...one step at a time!
