looks like you have an enviable record for keeping fit AND a health gurus diet to go with it, BUT, the weight gain you are experiencing just goes to show how efficient your digestive system has become by fasting and other means.
The one thing you have not mentioned as yet, is "proper food combining" which will allow you to eat more, but actually prevent weight gain.
