In re-reading this post, I want to use your sensitivity to gluten as an example. It's true that alot of people are sensitive to it, but I'm not one of them and even testing proved this to be true.
So where do you believe the sensitivity came from? Is it just a reaction to other things being out of whack or were you born with it? It's my understanding that gluten sensitivity dates back to originating from certain ancestors who lived without it in their diets, hence the sensitivity to their heirs. This theory seems to indicate it's inborn, or became so after centuries of certain diets, similar to evolution.
I know someone who had a lifetime of mysterious, debilitating symptoms; dr's even wanted to remove some reproductive organs. Turned out her problem was extreme sensitivity to gluten! Her life became normal for the first time after that discovery.
So that's what I mean about our biological differences being more diverse than we have been able to measure til now. Hope I explained that properly!
