I feel like you are fine -- no need to worry about "organic" as that is a label certifying what you know -- that your dairy cows are well fed and and not overdrugged. No need to worry about contaminated water as others do -- your cows are up in the mountains, not in an area where they would drink contaminated water. I'm sure if you buy locally in Italy you're in good shape.
I have a funny story which is that I went over the weekend to the health-food store and the regular store and bought a lot of stuff. Snacks, fruit, juice, cheese, etc. -- you name it, for once our fridge and shelves are full! So I was doing something yesterday and got caught up in it, and then realized I hadn't noticed what my twin almost-three-year-olds were up to lately, and hadn't heard them, either. Uh-oh.
I went downstairs and the door to the fridge was wide open, and the girls had taken out this package of pork-fat scraps (I buy them and use them for sauteeing greens, or for fat for browning meat, etc.) and were chewing on them (in the middle of my bed, which is their favorite place to eat this stuff, of course). So -- raw pork fat -- their first choice in a fridge that held many options.
