I think that what you said is good advice - make a stew with the beef in it and have a lot of peas and carrots.
Personally, beef is very heavy for me because of the texture. I much prefer fish or lamb as a mainstay of protein. Why not try to work the diet with other proteins first and then see what you think about introduction of beef? (Maybe I'm missing something essential in the diet - I'm a newby to this one).
