Just have to chime in on this one. Frying with extra virgin olive oil is a great way to have some really good food that is good for your heart.

There is only one thing to remember when frying with EVOO. Fry at medium heat only. The oil should only be hot enough to bubble lightly when you put the food in the pan. The oil should never get hot enough to smoke. Never, never cook on high heat. It destroys the oil, eliminates the healthful things in the oil, and does not taste as good.

You have to fry things that are not too thick if you use breading. Mix half Italian bread crumbs with a mix of grated Italian cheese, add some garlic powder and fresh parsley, dip your veggie, chicken, fish, or meat (thin) in beaten egg and then in the bread crumbs. Fry in Extra-Virgin Olive-Oil on medium heat until the bread crumbs are golden. Take it out of the pan with a slotted spatula, do not drain on paper, and eat while hot. You will get nuts. The taste is great and it is healthy for you too.

That is what I learned in Italy from some great cooks. The Extra-Virgin Olive-Oil on medium heat will put a beautiful finish on any meat, fish, chicken, or veggie.

Please forget about anything that talks about smoke points and high cooking temperatures for EVOO. You dont need the info. Medium heat only.
