You do not have to eliminate any grains provided you tolerate them well; just LIMIT your intake. Approximately, the ratio of calories coming from carbs in your diet so that your body's needs are met should be about 20, 25% at the very most. One could say that everything above this level just feeds the candida.;-D
You need an average of 2000 calories a day to function--of course it varies with size, weight, age, etc-so you should get about 400/500 calories from carbs on a strict diet; and the remaining 1600 should come from proteins and fats.
So it means that when you are on the candida diet, you should eat more fats and proteins than usual to compensate for the limited carbs. I found out that fats and protein give you lots of energy. And you can snack on brown rice cakes--even some crackers if you tolerate them--because they are only 35 calories--

but of course do not eat the whole package! Nuts are also a good snack, as well as raw veggies-carrots,
Celery stalks, with organic avocado dip, etc., cold organic meats like roast chicken, turkey, organic salmon spread or tuna spread, delicious on a rice cake, kefir, hard boiled eggs, fermented veggies, even some cheeses provided the lactose content is small.
