I would say a lot of it depends on what church you are in. If the church you are in is letting the pastor live "high on the hog" as you say it, then its probably not a good church.
Myself, I don't go to church much anymore, but the church I do go to and that I'm a member of is a small church. I've found that the big churches are more like institutions where the pastor is paid a lot and the emphasis seems to be more on getting new members, rather than preaching the word.
Your ideas sound really sound. Unfortunately, from what I've know as a "preachers" son, much of it is not realistic. Even in a good church, it seems like about 20% of the people do about 80% of everything along with the pastor, while the other 80% just show up on Sunday.
So like in my Dad's case, people back out or don't show up and he has to take care of it.
So I understand your frustration, but people, even Christians are human.
Maybe your feelings are more from being unhappy about the work you are doing with the ministry and sunday School. It sounds like you are in the 20% doing 80% of the work category. I don't think God or Jesus would be upset if you maybe took a break from that or tried something else.
I think Jesus wants us to enjoy what we are doing in life for him. If you are upset about all the work you are doing in the church, maybe its time to let go of some of it and try something else in the church.
Just my 2 cents.
