I do have to take back what I said about the first video, however, I will re-qualify my commentary as follows:
In the video from the Diabetes UK Charity, the Fat they are speaking of is not dietary fat, it is adipose fat present in the blood from being obese. But obesity is not generally cause by ingestion of fat alone. Excess carbohydrates that are not used for energy through exercise, are converted to fat and stored in the body as fat.
The same is true in the article. They even use the specific term "adipose' in the study. They used a high fat diet to make the mice obese, in order to make the connection between obesity and Type II diabetes. So the comparison was between obese mice and non-obese mice. They could have been mad obese by any type of high calorie diet.
Here's a more recent study published in Science Daily using human data stating that low carb prevents the onset of type II diabetes.
With regard to the second video, yes, the guy drinks some amount of olive oil, but he then subsequently piles on the carb calories with some kind of sandwich, I presume it was a cheeseburger of some type, and slices of pizza. Those are anywhere from 40-70% carbs. Those are what really cause the spike in his blood sugar to which his insulin could not respond right away. Had he ingested only fats, I might have bought it, but he had to eat something to make his blood sugar spike, which were the carbs. Is he a liar? No, but perhaps an expert in the art of deception. What's up with the sticky platelets? that blood was outside of his body. Was it just clotting? He claims it was cause by fat.
