There isn't an standard anti-candida diet. Nobody can tell you that one diet is better than other. The low carbohydrate diet was developed by Dr. Truss in a try to boost the antifungal effects at that time. The only systemic drug they had at that time was Ketoconazole. After that diet, many versions have been created. Dr. Crook changed the diet several times. You should keep your calories intake high. You need to boost your immune system as much as possible and look for anything that can keep it stuck such as heavy metals, parasites,
food intolerances , H. Pylori, etc
A severe anti-candida diet isn't only boring but no healthy. I will give preference to whole grains over fruits in the first phase. Low glycemic index carbohydrates are a good source of energy that your cells required to function. If you go for fruits, I think strawberries, green apples, bluebarries are a good start.
IMO, if you already were in a very restrictive diet for 6 weeks, you should open the diet slowly. One thing I can promise you is you won't kill candida even if you eat meat and vegetables for 10 years, and you won't feel better following this diet. Even using high amount of fat, your body has to jump over a different metabolism to convert that fat in energy. ( ketosis ) Trust me, it isn't easy for a body that has been all its life eating carbohydrates.
