The no fiber part is confusing since the cell walls of the yeast are composed of cellulose, which is fiber.
I looked up the products and the non-fortified specifically states unsweetened, which could account for the lower carbohydrate content. So this would be the best for now. They must leave some of the molasses they grow the yeast on in the fortified.

The unfortified contains so little in the way of nutrients, and I didn't see any pantothenic acid either. It is really basic as far as vitamins. Any advice would be appreciated as to what brands might be better.

The vitamins are not always listed since the naturally occurring vitamins will vary from batch to batch. So the vitamins listed tend to be the added vitamins so the amounts can be stated.
But nutritional yeast is nutritional yeast. The only difference will be if it is fortified or not.
