I want to start making kefir on a regular basis, for use in the (adapted) Budwig diet.
I will use goat's milk as I'm allergic to cow's milk. I've made goat's milk kefir once (as a try-out), with store-bought kefir grains. It worked well, the kefir was good.
But I have one problem: I can't go to the health food store every week to buy new goat's milk. It's too far away for that.
I always shop there so I have enough products for 4 weeks.
Is it possible to buy enough goat's milk for 4 weeks, and freeze the milk cartons I don't need yet? How long will they stay fresh in the freezer (if they normally stay fresh for one week in the refrigerator)?
Also, does freezing have any negative effect on the quality of the milk (and the quality of the final kefir)?
Does anyone know?
