Live Hummus Recipe (Yes, raw. Really.)

The secret is soak/sprout your dried chickpeas. And you have to do ahead. Way ahead.
One cup dried chickpeas
One lemon plus juice of one lemon or lime.
One cup raw sesame tahini. I buy from my local health food grocer. May be purchased on line....regular tahini may also be used...the sesame seeds are roasted....depends on how much of a raw purist you are :)
Three or more cloves garlic. This is different for everyone.
One-half cup cold pressed extra virgin olive oil
One tsp citric acid (or more to taste.)
One tsp sea salt. I use celtic. (to taste)
One stalk celery
One cup of dried chickpeas soak in enough water for cover. Soak overnight, at room temp. Rinse and soak again. Rinse everyday and cover again for at least three days.
Drain chickpeas and chop/puree in your food processor.
Chop celery.
De-seed whole lemon, peel, reserving about half of the peel.
Add all ingredients to food processor and blend until smooth. If too dry add more olive oil or lemon juice (to taste, you don't want it to be sour.) Adjust seasoning to suit.
Raw has a bit more pungent flavor than cooked.
For best flavor, chill at least 8 hours or overnight before serving.
Serve with live flat bread, cut vegetables, etc...I LOVE jicame sticks dipped in this.
