Food substitutes for food allergies

Hi all, (this will be short becuase I've let wheat in my diet too much recently, gives me joint pain and fatigue.)

Some kitchen tricks. There will be more in future posts, I'll set them out here as I think of them - these are things I do out of habit, but haven't written down until now:

Allergic to dairy and soy, and need a "milky" substance?

If you don't want the sweetness of rice milk (all rice milk is sweet for some reason), try canned or fresh made coconut milk. Canned is oh-so smooth. Freshly make in your blender from coconut and water isn't as smooth, but fresher. Canned, because of it's smoothness, works best in all recipies and dishes calling for milk, even pudding! And if you don't really like the tast of coconut, recipes with other flavorings in them often cover up the coconut taste.

Miss peanut butter? Don't like the taste of almond butter?

Many health food stores sell fairly fresh tahini, which is sesame seed paste. Wait - if you've tasted in before and been less than enthusastiac, there are two things to do: The stuff in sealed jars that aren't needing to be refrigerated in the store is usually bitter. Try to find the type that is fresh and sold in refrigerated section. Then mix it with some real butter,or if you can't have butter, use margarine (look for trans-fat free type, they finally have it in stores). That is the closest thing to peanut butter satisfaction that I have found.

Need a cheese-like sauce for on vegetables, for "pretend" pizza, etc?

I've tried the nutritional yeast recipes, and didn't care for them. Best thing I've found (although it's still not like cheese, but makes me happy for the time being) is a mix of mayonaise (the kind without sugar), tahini (sesame seed paste, buy the refrigerated type for less bitterness), and any of the following spices that you are allowed to have: garlic powder, anchovy paste, sea salt.

Can't have grains, and need breakfast ideas?

Breakfast is the damndest meal. I hate waking up early!! anytime before 10 in the morning, my stomach rebells at the thought of eating vegetables, I can't eat most fruits anytime, not supposed to have grains at all, and meats are too heavy that early. Yet I'm needing energy so I can make it to lunch. Arg. One answer is premade baked sweet potatoes. The precooked pieces can be heated in the morning. Have with a drizzle of butter or oil on top, and energy usually follows.

I'm off to rest. Joint pain is a symptom that I haven't yet come up with a quick little fix for. Readers of previous posts in which I listed fixes for other symptoms may wonder why I'm not dousing my head in hot then cold water or something ;-) Well, it's because none of those tricks work for my joint pain.
