Some yummy ideas for healthy foods.

I am trying to redirect my thoughts when I start day dreaming about food, but every now and then I don't catch myself and I come up with some yummy ideas for healthy foods. I am going to start keeping track of them.
Note* I am a very poor speller. I admit this freely. I used spell check, but it doesn't catch eveything. You can correct me if you like, but if you catch the drift that is good enough for me!
MASHED BEAN SALAD
3 Cups Romaine Lettuce
1/4 Cup Pinto Beans (Mashed)
1/4 Cup Black Beans
1/2 Avocado
1/2 Cup Homemade Salsa
2 oz Shredded Almond Cheese (Pepper Jack)
Dressing: 1 Tbs. Flax Oil or Goddess Dressing (Trader Joe's) or Sweet Chili Sauce

CHICKEN BRUSCHETTA SALAD
3 Cups Romaine Lettuce
3 oz Shredded Chicken
1/4 Cup Bruscheta Mix (Trader Joe's)
1/4 Cup Cucumber diced
4 Slices Red Onion
2 oz Shredded Almond Cheese (Mozzarella)
Note: Mix Bruscheta Mix with Shredded Chicken
Dressing: Lightly Sprinkled Apple Cider Vinegar or Rice Vinegar

ANYWAY YOU DICE IT SALAD
2 Cups Baby Spinach
1/4 Cup Diced Tofu (Firm)
1 Veggie Sausage Patty (Diced)
2 Garlic Cloves Minced
Ginger Minced (Same amount)
1/2 Cup Diced Mango
1/4 Cup Diced Tomato
1/4 Cup Diced Cucumber
1/4 Cup Diced Red Onion
1/4 Cup Diced Carrots
1/4 Cup Diced Zucchini
1/4 Cup Diced jicama
1/4 Cup Green Pepper
1/4 Cup Avocado
Dressing: 1 Tbs. Walnut Oil and sprinkled Rice Vinegar

BREAKFAST SALAD (Credit to my friend and cooking mentor Elee)
1 Cup Spring Mix Salad
1 Egg (Scrambled)
2 Veggie Sausage Patties (1 quartered, 1 eighthed)
1 oz Feta Cheese (really crumbled)
1/2 Diced Roma Tomato
Dressing: Sauté= 1 Garlic Clove minced, 4 Kalamata Olives Diced, 1 Tbs. Olive Oil
