Almond Milk
How do you make Almond Milk and what is it good for?

I would like to know if there is a recipe for almond milk or is it something
you have to buy?
Almonds increase ojas, thus almond milk is very nourishing and is good for
all constitutions. To eat almonds, soak them, as soaking raw nuts and seeds
activates them, turns off the enzyme inhibitors, thus making them easier to
digest. Almonds are saatvic, energizing, and balancing. The almond tree belongs
to the same family of plants as the rose, the plum, and the peach. The
ayurvedic way to make almond milk is to blanch the almond and then soak them
overnight before blending them. The skins are thought to be too astringent and
can aggravate Pitta. Sesame milk is also nourishing and can be made in the same
fashion, as can any other type of seed or nut milk.
Almond Milk
1 Cup Blanched, Soaked almonds
4-6 Cups Water
Combine almonds and water.
Place in a blender and process until all of the almonds are ground.
Drink as is or filter using cheesecloth or a clean piece of cloth (T-shirt
cotton works well) before drinking. Use the almond pulp to make nut loaves or
patties or to add to baked goods.
Agave nectar, maple syrup or a few soaked dates may be added (not for
Kapha!) before blending for sweetness. Some enjoy honey and use it as well. I like
to add warming spices (ginger, nutmeg, cinnamon, cardamom and even curry
spices at times) to my almond milks, depending on the intended use and consumer
of the milk.
I am working on a cookbook that combines the sciences of Ayurveda and blends
that wisdom with Traditional Chinese Medicine properties (they are very
similar and compatible in many ways).
