Raw foods, raw foods, raw foods. And lots of 'em. You can't overeat on a raw food diet, and there should be no problems with eclampsia on raw foods. You can eat high calorie and high fat and if it's raw, you won't gain excessively. I should qualify and say that this has been my experience and that of many others on raw. My opinion is that a diet of 80 to 90% raw plant foods - fruits, veggies, nuts, seeds, oils - with bits of high quality animal products - eggs, dairy, meats (from organic/pastured/free range animals) is ideal. A little bit of cooked (or raw) animal product will insure the range of nutrients she needs to complement a mostly plant diet. (I've read about many strict vegans becoming deficient, and wouldn't recommend the vegan diet to anybody.)
