I dont know anything about dog nutrition, but i would take it slow.
Ive had guinea pigs (almost like a dog, just abit smaller) and my last one followed an amazingly raw vegetable diet. Needless to say he lived LONG. Actually, the reason he died was because i gave him a piece of bread, which he responded incredibly spastic too. My theory is bodies, including those of animals adapt depending on what food is being fed (up to a certain point, ofcourse), so i'd advise to take it slow.
About the bone, i dunno, i wouldnt worry about it.
