Re: Soaking grains which are 'broken'?

Yes, you can and should soak all grains before consuming.

Soaking grains improves their nutritional benefits.

"Soaking allows enzymes, lactobacilli and other helpful organisms to break down and neutralize phytic acid. As little as seven hours of soaking in warm acidulated water will neutralize a large portion of phytic acid in grains"...from Nourishing Traditions.

Once soaked, rolled grains should cook up in less than 5 minutes. Soak in 1 cup of warm water, plus 2 TBLS whey, yoghurt, kefir or buttermilk. Soak overnight or longer. Boil 1 cup of water and add soaked grains. I soak mine in yogurt/water. I usually boil more than one cup of water. I like mine soupy with ground flax seed on top.

Also, soaking the grains makes them much easier to digest.
