Making the whey and cream cheese recipe


I'm trying to make whey from raw milk and its the 3rd day and all I see is a separation of what looks like regular milk on the bottom (85%) and yellow cream on top (15%)that is really dark yellow on the very top (looks moldy). I don't see curdy stuff or clear liquid. I have the milk in a glass pitcher with just cheese cloth and a rubber band on top.

Is this normal?

Do I have to cover the milk in an airtight container?
