I have the same question also- and am going to read everyone's responses to you on this.
For what it's worth-- I would not hesitate to occasionally use organic --hormone free butter, but balance it with more plant oils in proportion. It's more common for folks to hardly eat any plant oils, and mostly take in animal fats. But if you keep the animal fats lower on the eating list than the plant fats-- you should be okay.
Sometimes I use butter with some foods, but most of the times I will use unrefined cold-pressed olive oil, and make sure to get my flax seed oil and fish oil capsules-- and I eat alot of raw nuts and seeds in different recipes.
I think the ideal dairy we could eat is raw unpasturized--- preferrably from goats milk , since it doesn't encourage mucous like cow's milk does.
I just cut up some chunks of raw unpastuerized, unhomogenized cheddar cheese (from free range cows) in my garden salad-- along with some onions, avocado chunks, garbanzo beans, olive oil , apple cider and balsamic vinagar. OMG, was that tasty- and it ended up being my supper for tonight!
