for mock dairy, look for a copy of the Uncheese Cookbook. Lots of mock cheeses made from nuts or white beans. I also use nutritional yeast as a sprinkling of cheesy flavour.
see sproutpeople (dot com) for more sprouting info that you will ever need (and they sell seeds, but i get mine from bulk bins (at Whole Foods/Wild Oats) and a local co-op...look to Whole Foods/Wild Oats/whatever your natural foods store is, and make sure the folks working there know you are interested in some seeds.)
like spicy seeds, do I mix ye old standard alfalfa with radish or mustard.
fenugreek is...interesting, but I like chewing the seeds better taste wise.
