Hello Rivergallery:

You may want to start with moong beans sprouts, one of my favorites. Go to any Indian store and ask for Moong beans, they are dark green and less than an 1/8" round. Moong has good protien and other vitamins.

Soak handfull moong beans in water over night. Next morning drain the water out and wash them under running cold water. Take a cheese cloth or any piece of cloth and wet it, but not soaking wet. Place all the moong in the cloth and put it in a bowl, wrap it and put the bowl in a dark place, perhaps your oven (not heated). Next morning take them out and they are ready to be eaten. MMMMMM... I take mine with Sea Salt and cayenne pepper with canola oil. I eat this for breakfast, lunch or dinner. Hlaf a bowl gets me going.
