In addition to the other good advice - I usually bake the bones first, before I use them for broth. I've been told it's better to eat the marrow after that than to boil the hell out of it along with the bones anyway (that is, it tastes good baked/roasted). If you do this with a whole chicken, you'll find your broth comes out a lot better. And it's just easier anyway - you can eat the meat off the bones first :)
