Hi,

I just started the BED myself. I have made milk kefir in the past using "milk grains" someone sent me in the mail. They worked really well. According to BED you should not include milk kefir until after your leaky gut has healed (approx. 3 months).

So I am making the young coconut kefir using the BED kefir starter. Just made my first batch and it turned out well. Also cultured the coconut meat "pudding" - excellent.

The BED kefir starter is kind of expensive. I am also wondering if I can use my milk kefir grains to culture the young coconut water. Kefir is made by the microorganisms eating the Sugar in whatever liquid you put them in. So all the Sugar is gone when you drink the kefir, be it milk or water kefir.

I'm not a vegan but I hope that helps some.
