The most unsaturated fat has the highest iodine value. Dietary fat removes iodine from the diet. Iodine protects double bonds while they are being transported to the sites where they are needed such as blood vessels and synaptic membranes of the central nervous system."

does dietary fat remove iodine from the diet?
