Re: But why does it change color?

I've eaten plenty of pineapple in Hawaii and in southeast Asia. Nothing like fresh, ripe, sweet pineapple! Yummm.
I know of one grocery store near me that sells ripe and good quality pineapple. The others have weird or bad pineapple. They aren't ripe, and some even have weird flavors. The interesting thing is, this good pineapple is also a little cheaper than all the rest! They must have an excellent source. I now only buy my pineapple at this one store, the rest aren't worth it.
