ah! i didn't know all that, thanks for explaining that. actually my pineapples never mold cause i spray the whole thing with hydrogen peroxide once a day while it is "ripening" this works very well.

as far as choosing my supplier, there are two stores that sell organic pineapples here, so its one or the other.

i had indeed read that papain is harvested from green papaya, not fully ripened papaya. so what you say makes sense.
