Here's a link explaining water intoxication. It boils down to osmosis and homeostasis. It's not how much you drink, but how fast you drink it!

People have died from this occasionally, off and on, in fraternity initiations, too. Apparently people think a water-drinking contest sounds harmless but it can be deadly.

But sure, you could still drink a gallon a day as long as it's spread out.
