A dish that I make fairly often is a wild/basmati rice salad. The initial prep takes a little time, but it lasts a few days...
wild rice, basmati rice, olive oil, balsamic vinegar or lemon juice, Sea Salt , pepper, finely chopped colorful vegs...spinach, carrots, red peppers, scallions, red cabbage(gotta get a lot of color in there) kalamata olives...the possibilities are endless...& it's REAL purdy...
