While it is definitely important to eat a good share of vegetables, there are some overlooked aspects of some vegetables.
I offer as examples my parents. Both are older than 84, both are healthy and active for their age, and neither is vegan.
It is also important to note that some vegetables are far more important than others. Brassicas offer many more life extending properties than potatos do.
I think that it is far more important to avoid excesses of things and achieve a balanced diet rather than excluding some things and completely depending on others.
