Thanks again for the info. This could go on for days...

Are you familiar w/EM Concentrate or Donna Gates' starter cultures? Wonder how they fare? Just read about EM which got rave reviews. Curious what is in Indian yogurt bacterially since they don't use starter cultures.

If a 15 hr vs. 24 hr fermentation kills less bacteria, would it be better to use a slightly higher temp to speed the fermentation? Usually a 12 oz jar of yogurt ferments in 9 hrs for me. What qty of yogurt are you referring to for a 24 hr period?

Interesting re: kefir and lactose not being digested. Is this always the case? What about when adding specific cultures/strains? I use one from Nutrient Research (Premier Research Labs). Do you know why this occurs? Is it temp? Wonder whether coconut kefir has a similar or different effect. I notice fantastic results, in skin, hair, energy when eating it (cultured w/fresh, organic young Thai coconut water). It is only an 8 hr fermentation w/the Nutrient Research kefir grains. I have a feeling the bacteria have a field day w/the Sugar in the coconut water. It functions better than kombucha w/o side effects.

What is the SCDiet?

Curious where you learned all this about yogurt/kefir, just life/healing in general?
